Antioxidants are molecules that are capable of preventing or delaying the oxidation of cells, tissues, and other molecules of our bodies. Free Radicals are all the chemical species that present an odd electron in the external orbit of their atomic structure, and which are capable of existing in an independent manner. Due to their configuration they generate a great instability and are highly reactive. These molecules don’t have receptors in the body therefore they have a great capacity of attacking cells and tissues generating oxidation or stress.

In normal physiological conditions, the body neutralizes these free radicals with antioxidant enzymes. When the amount of free radicals overcome the possibility for the antibodies to act, problems like cell aging, cancer development, or degenerative neurological diseases like Alzheimers can start to take place.

For this reason, the exogenous antioxidants, which are those that we consume in our daily nutrition, and which we can find mainly in foods that are rich in Vitamin A, Carotenes, Vitamin C, Vitamin E, Flavonoids and Tannins present in Avocado, Guava, Melon, Papaya, Tomatoes, Strawberries, Blueberries, Raspberries, Blackberries, Grapes, Apples, Carrots, Mangos, Oranges, Mandarines, Pomelos, Green Tea, Wine, Dark Chocolate, and Cocoa.

The way in which these antioxidants act in the body can be in a preventive manner, placing themselves as the beginning of an oxidation chain, or as secondary oxidants that are blocking a stage of the oxidation chain, once its started, capturing free radicals. A carotene molecule (antioxidant), is capable of sustaining more than twenty free radicals.
